A Spin on Mac n’ Cheeese

This was a recipe I had found many years ago and had never tried it until recently. I had to make it twice to make sure it was really good. Well, it was better the second time.
Ingredients
- 1 average sized head of cauliflower, “riced” in food processor or with grater.
- CHEESY SAUCE:
- 3 Tbsp ground flax
- 7 Tbsp Nutritional Yeast (I use Braggs)
- 3 Tbsp Unsweet Almond Milk
- 1 Tsp Coconut oil
- 2 Tsp Ground Mustard
- 1/4 Tsp Garlic Powder
- 1/4 Tsp Onion Powder
- 1/4 Tsp Himalayan salt
- 1/2 Tsp Hot Sauce (Sriracha or any hot sauce)
- 1/8 – 1/4 Tsp Pepper
- TOPPING:
- 1 Tbsp Almond Flour
- 1 Tbsp Nutritional Yeast
- Optional – 1 Tsp Ghee
Instructions
- Pre-heat oven to 450 F
- Prepare dish by spraying glass round pie baking dish with coconut oil
- Cook riced cauliflower in large skillet about 10 minutes or until soft
- In large bowl, mix all sauce ingredients until smooth (the sauce will be thick)
- Combine cauliflower and cheese sauce and mix until blended well
- Spread the mixture into the dish
- Sprinkle the almond meal and nutritional yeast over the top
- Drizzle melted ghee (optional)
- Bake 25 minutes or until top is golden
