This was a recipe I had found many years ago and had never tried it until recently. I had to make it twice to make sure it was really good. Well, it was better the second time.

Ingredients
  • 1 average sized head of cauliflower, "riced" in food processor or with grater.
  • CHEESY SAUCE:
  • 3 Tbsp ground flax
  • 7 Tbsp Nutritional Yeast (I use Braggs)
  • 3 Tbsp Unsweet Almond Milk
  • 1 Tsp Coconut oil
  • 2 Tsp Ground Mustard
  • ¼ Tsp Garlic Powder
  • ¼ Tsp Onion Powder
  • ¼ Tsp Himalayan salt
  • ½ Tsp Hot Sauce (Sriracha or any hot sauce)
  • ⅛ - ¼ Tsp Pepper
  • TOPPING:
  • 1 Tbsp Almond Flour
  • 1 Tbsp Nutritional Yeast
  • Optional - 1 Tsp Ghee
Instructions
  1. Pre-heat oven to 450 F
  2. Prepare dish by spraying glass round pie baking dish with coconut oil
  3. Cook riced cauliflower in large skillet about 10 minutes or until soft
  4. In large bowl, mix all sauce ingredients until smooth (the sauce will be thick)
  5. Combine cauliflower and cheese sauce and mix until blended well
  6. Spread the mixture into the dish
  7. Sprinkle the almond meal and nutritional yeast over the top
  8. Drizzle melted ghee (optional)
  9. Bake 25 minutes or until top is golden
