Creamy Cauliflower Spinach “Dip”

I found the original version of this recipe on “livingchirpy.com”. I made some changes to the ingredients to make it non-dairy and more of a side dish than a dip. It came out fantastic!
Ingredients
  • 1 head cauliflower
  • 10 oz baby spinach
  • 1 small white onion diced
  • 1/2 almond nut cheese
  • 2 tbsp unsweet cashew milk
  • 1 tbsp nutritional yeast
  • 1tbsp + 1 tsp ghee
  • pinch of nutmeg
  • salt & pepper to taste
Instructions
  1. Pre heat broiler
  2. Boil or steam cauliflower florets until cooked through
  3. When cauliflower is cooked place it in a blender or food processor with cashew milk, nutritional yeast, 3/4 of the almond cheese and 1 tbsp ghee
  4. Cook onion in extra large skillet pan with 1 tsp ghee until soft.
  5. Add spinach & nutmeg & cook until wilted
  6. Mix everything together in pan, adding salt & pepper to taste
  7. Place in glass baking dish & top with remaining cheese
  8. Broil until cheese is golden brown
