Healthy Crust-Less Apple Pie

This was a single serving experiment and oh my goodness did it come out YUMMY!
Ingredients
- 1 medium organic apple
- 1/2 tbsp Almond Meal – coarsely ground
- 1/2 tsp Ghee
- 1/4 tsp PLUS extra for top, Cinnamon to taste
- Dash of salt
- 1 tbsp ground walnuts, plus 1 tsp for top
Instructions
- Preheat oven to 400.
- Peel and cut apple into small chunks
- Heat apple in glass bowl either in microwave or oven until soft and easy to poke with a fork
- In small bowl, combine almond meal, melted ghee, cinnamon, salt and walnuts
- Pour almond mixture over apple filling and place in oven
- Cook at 400 for 10 minutes or until the topping has settled into apple mix
- Top with additional cinnamon and walnuts
- Serve hot
- Add a scoop of So Delicious Coconut No Sugar Added ice cream for an extra treat!
