Serves: 16-20 cookies
These are cookies that have only a hint of sweet. I couldn’t tell whether I should make them sweeter, or simply let them “be”. I went with the latter.
  • 1/2 cup Nuttzo Organic crunchy nut butter (peanut free)
  • 1/2 tbsp grass fed butter
  • 3 tbsp Lakanto maple syrup (or any pure maple syrup)
  • 1/3 cup finely shredded coconut
  • 1 1/2 cup almond meal or almond flour
  • 1/2 cup Lily’s no sugar added dark chocolate chips
  • 3 tbsp hemp seeds
  • 3 tbsp Barlean’s flax chia coconut
  • Dash of salt
  • Walnut pieces (or other nut broken up for crunch – optional)
  • 1/2 tbsp grass fed butter
  1. Preheat oven to 355F and line a baking sheet
  2. Mix nut butter, butter & maple until smooth
  3. Add in remaining dry ingredients & mix it together with your hands or in processor
  4. Roll into balls and then flatten into round edge circles on sheet
  5. Bake for 8-10 minutes or until lightly browned & crisp
