Protein Packed Egg Muffins

High Protein Egg Muffins

Serves: 6 muffins
This is fantastic for weekly prep. You can freeze it and it travels nicely.
  • 6 eggs or 6 whites, 3 yolks
  • 6 slices Organic, nitrate free Applegate Farms Smoked Turkey Breast
  • 1 cup Fresh organic baby spinach leaves
  • 6 oz package organic baby bella mushrooms
  • 1/2 tbsp coconut oil
  • Cheese of choice (optional)
  • 1 ripe avocado, sliced
  • Salt and Pepper to taste
  1. Preheat oven to 350
  2. In large skillet, cook spinach and mushrooms in coconut oil
  3. Beat eggs in processor until fluffy
  4. Mix in the spinach and mushrooms
  5. In oversized muffin pan (6 muffins) Place 1 slice of turkey in each cup and shape to cup
  6. Pour the egg mixture a little more than 1/2 full
  7. Bake at 350 for 20 minutes or until a fork comes out clean
  8. Top with 2 slices of avocado on each muffin
  9. Add salt and pepper
