Spinach Zucchini Banana Cream Bone Broth Pancakes

This is a spin on my zucchini spinach pancakes from previous posts. I’ve discovered Ancient Nutrition’s Bone Broth Protein powder in various flavors and Banana cream is proving to be my favorite! Throw in some chocolate chips and it tastes just like Chocolate Chip Banana Bread!
Ingredients
  • 1/2 medium organic zucchini
  • 1 handful of spinach
  • 3 egg whites
  • 1/2 scoop banana cream bone broth protein powder by Ancient Nutrition
  • 1 splash vanilla extract @ 1/2 tsp
  • 1 tbsp hemp seed
  • 1 tbsp chia seed
  • 1-2 tbsp coconut flour (or almond)
  • Stevia drops or 1 pack of stevia
  • Ghee & cinnamon for topping
  • Lakanto maple syrup (optional)
  • Lily’s Chocolate Chips (optional)
Instructions
  1. Blend all ingredients in a food processor until relatively creamy. Coat pan with coconut oil spray or ghee
  2. Cook on each side until golden
  3. Sprinkle chocolate chips before flipping
  4. Serve with cinnamon & ghee
  5. Lakanto maple syrup is glycemic friendly!
